Makes 2 servings
12 ounces ground beef
¼ c. chopped onion
3 T. seasoned dried bread crumbs
Tomato Sauce (recipe follows), divided
¼ t. salt
⅛ t. pepper
Garnish: radish slices and parsley sprigs
Combine ground beef, onion, bread crumbs, 2 T. Tomato Sauce, salt and pepper. Divide into 6 equal portions: form each into a ball. Bake on a rack in baking pan, at 350 F, for 25 minutes or until done to taste. Transfer to serving platter. Top each meatball with 1 T. Tomato Sauce: serve remaining sauce on the side. Garnish with radish and parsley.
Each serving is equivalent to: 4 ounces Meat Group, 2 T. Limited Vegetables, ½ serving Bread, Tomato Sauce (recipe follows).

TOMATO SAUCE
1 t. olive oil
¼ c. chopped onion
1 garlic clove, minced
1 c. water
½ c. canned crushed tomatoes
¼ c. tomato paste
½ t. each salt and basil leaves
½ bay leaf
¼ t. oregano leaves
⅛ t. pepper
In a small saucepan heat olik. Add onion and garlic: saute over medium heat until onion is browned. Add remaining ingredients, stir well to combine. Bring to a boil, reduce heat. Simmer stirring occasionally, about 35 minutes or until mixture is thickened and reduced to about 1 1/4 cups. Remove bay leaf. Serve hot.
Each serving is equivalent to: ½ serving Fat, 2 T. Limited Vegetables, ½ serving Vegetables, ½ serving Bonus (2 T. tomato paste).
